  Pectinase is a member of the hydrolase family and an important enzyme in the field of biotechnology, pectinase is widely used in industrial production. Acid pectinase is mainly produced by fungi, mainly used for juice clarification, improvement of juice filtration speed and juice yield. It is also used to reduce the viscosity of the juice, prevent the gelatinization of puree and juice concentrate, strengthen the color of the grape juice and comprehensively utilize fruit and vegetable scraps and other aspects.
